Colorful power salad
- 2 cups arugula
- 1 cup broccoli sprouts
- 1/2 cup fermented krautchi or fermented veggies of your choice such as raw fermented sauerkraut
- 1/4 cup shredded carrots
- 1/4 cup soaked sundried tomatoes
- 1/4 cup cucumbers
- 1/4 cup red radishes
- 1 heaping tbsp scallions
- 1 ripe avocado sliced or diced
- 1 tbsp dulce sprinkles
- 2 tbsps hemp seeds
- dash of high quality sea salt & pepper
Instructions:
- Add all ingredients to a large bowl and mix together.
Dressing options:
- option 1: 1 tbsp apple cider vinegar, drizzle of hemp oil, dash of high quality sea salt and pepper
- option 2: Cilantro walnut pesto
Cilantro walnut pesto
Ingredients:
- 1 cup organic raw organic walnuts
- 1 packed cup organic cilantro
- 1/4 cup hemp oil
- 2 cloves of garlic
- dash high quality sea salt
- dash of fresh cracked black pepper
Instructions:
- In a small food processor process all ingredients together to desired consistency. I enjoy mine with texture so I only process it a little.
Serving suggestions:
- Enjoy your cilantro walnut pesto over your colorful power salad. Mix it all together and then place in a half of a nori sheet to enjoy each bite!
