OMG this is a must-make winter warming soup!!
Create it in your kitchen, scoop yourself a bowl and then sit in front of the fire place to savor every flavorful bite.
- 24 oz beef or chicken bone broth
- 16 oz coconut milk
- 3 tbsps red thai paste
- 2 garlic cloves crushed
- 2 portobello mushrooms cut into big chunks
- 1 red pepper cut into big chunks
- 1 head of cabbage cut into chunks
- 1 onion cut into chunks
- 1 baby bok choy chopped
- 1 tbsp fresh lemongrass chopped
- 1 block sprouted organic tofu
- 1 1/2 himlayan sea salt
- black pepper
- juice of 1 lime
- 1 head cilantro chopped
Place bone broth and coconut milk in stew pot and heat on medium/high heat. Add garlic, salt, pepper, thai paste, cabbage, red pepper, bok choy, lemongrass and onion and let cook till veggies are soft.
While soup is cooking place 1 tbsp of ghee in sauce pan on medium heat. Break tofu apart with hands into small chunks, place in saucepan and saute till lightly brown on outside.
Take soup off heat and add tofu. Finally, top with lime juice and fresh cilantro.
Add more sea salt, black pepper and red thai paste as your taste buds desire.
